Passover
A major holiday preceded by careful preparations. It commemorates the exodus of Jews from Egypt, its celebrations last 8 days and fall in the second half of the month of Nisan, i.e. March or April. Everything begins several days in advance, when each household is thoroughly cleaned. Anything containing yeast - chametz - must be removed. When the Jews were hastily leaving Egypt, they did not have time to bake leavened bread. Only unleavened flatbreads - matzos. These became an integral part of the entire celebration, during which Jews read the Haggadah, telling the story of their deliverance from Egyptian slavery.
How we celebrate: It starts with a really big cleaning. Found chametz can be donated to other people who don't celebrate Passover or ritually burned. Pantry shelves are filled with boxes of matzos and quality wine. Not only during the Seder dinner, but throughout the entire holiday, the exodus of the Israelites from Egyptian slavery is commemorated.
What we eat: Food is key during this holiday. Nothing leavened is allowed. So no beer either ☹. On the first day of the holiday, the whole family sits around the table for the Seder dinner. It has a precise procedure. On a special Seder plate there is a roasted bone with a bit of meat, a roasted egg, bitter herb or charoset - a sweet mixture of apples, cinnamon, nuts and wine. Each course is a precise symbol associated with the Jews' exodus from Egypt. And then lots of other delicacies are eaten, stuffed fish, roasted chicken and various sweets. Matzo in a hundred ways plays the main role.
What we wish: Since great emphasis is placed on the kosher origin of food during the holiday, it has also made its way into greetings. We usually wish "Pesach kasher ve-sameach" meaning "happy and kosher Passover".
