Binyamina Prestige Shiraz is made from 100% Shiraz grapes harvested from vineyards in the Galilee region.
The winemaking process
The grapes are harvested and transported to the winery after dark, just before dawn. After a brief contact with the skin, and soaking at low temperatures to obtain colour and freshness, yeasts are added to the wine. Alcoholic fermentation begins at 25°C to preserve the grape aromas and create a balanced body. In total, the wine spends two weeks in contact with the skin to acquire colour and flavour before pressing. The wine is aged a little longer in tanks with some oak contact, after which the blend is selected and bottled.
Tasting notes
This is a rich wine with a beautiful purplish ruby colour. It is pleasant as a young wine with early black forest fruit, a little spice and a smoky quality characteristic of the variety. The palate is tantalising, soft and fruity and like the other wines in the series is best served slightly chilled. Under the right storage conditions, the wine will continue to age well for a short period of two to three years. But rather than wait for that, open it up and enjoy it young.
