This wine is fantastic with meat and fish and is particularly suited to richly spiced dishes. It's a classic choice for lentil soup, meat with thyme, oxtail with root vegetables and rosemary or oven-roasted fillet of sea bream on a bed of gnocchi, sweet potatoes and dill. The wine also goes well with strong cheeses such as Camembert and Gouda or sheep's milk cheeses such as Pecorino.

Product detailed description

Binyamina Reserve Merlot is made from blue-blooded Merlot grapes originating in Bordeaux. The grapes were harvested from our vineyards in two neighbouring areas: the Upper Galilee, primarily from Kerem Ben Zimra, on a combination of basalt and terra rossa soils on hard limestone bedrock with effective root aeration; and the central Golan Heights with deep, basalt soils and good drainage.

These two areas enjoy a cool climate with cool summer nights, hot summer days and low humidity. These conditions allow prolonged ripening and ideal development of the grapes' colour, aroma and flavour.

The winemaking process

The grapes from both regions are harvested after dark, with each vineyard being harvested at a slightly different time for optimum ripeness of the grapes. The grapes are de-stemmed as soon as they arrive at the winery and begin fermenting in small and medium-sized tanks of 5-12 tonnes for fermentation and flavour extraction. The wine undergoes two to three weeks of skin contact before pressing. This is followed by malolactic fermentation and light clarification, and the wine is then transferred to small French oak barrels, 25% of which are new and each 225 litres in volume, for ageing for 14 months. The blend is then selected from different parcels and the wine is bottled with minimal clarification and filtration.

Tasting notes

Binyamina Reserve Merlot is characterised by its moderate ripeness and excellent balance between freshness and concentration of ripe fruit flavours. Its rich, dark colour, concentrated aromas and flavours, complementary acidity and high complexity are the result of optimal ageing conditions and varied terroirs. In addition, reduced yields result in a wine with perfect, delicate balance.

The wine is deep red in colour with intense aromas of raspberries, ripe plums, sweet spices and subtle notes of roasted coffee on the nose. On the palate, the wine opens with aromatic black fruits, spices and mineral flint. The wine is full-bodied, balanced, refreshing and ripe, with an intense lingering finish.
