This wine goes well with grilled meats such as spicy sausages, smoked meats, beef steak in a mushroom and wine sauce or salmon with teriyaki and ginger. It also works well with sheep's milk cheeses and semi-soft cheeses such as aged Brie.

Serve at 16-20°C.

Product detailed description

The shiraz grapes were harvested from vineyards growing in two neighbouring areas: the Upper Galilee, primarily from Kerem Ben Zimra, and Alma, on a combination of basalt and terra rossa soils on a hard limestone subsoil with effective root aeration; and the southern Golan Heights, with deep, fertile basalt soils and variable limestone content.

The Upper Galilee has a cool climate with cool summer nights, hot summer days and low humidity. The ripening period in the southern Golan Heights is characterised by full sun and extreme heat with cool, dry nights. These conditions allow prolonged ripening and optimum development of the grapes' colour, aroma and flavour.

The winemaking process

The grapes from both regions are harvested after dark, with each vineyard harvested at a slightly different time for optimum ripeness. The grapes are de-stemmed as soon as they arrive at the winery and then transferred to small and medium-sized tanks of 5-12 tonnes for fermentation and extraction of flavours. The grapes undergo two to three weeks of skin contact before pressing. This is followed by malolactic fermentation and light clarification, after which the wine is transferred to small American and French oak barrels, 25 % of which are new, each 225 litres in volume, for ageing for 12 months. The blend is then selected from different parcels and the wine is bottled with minimal clarification and filtration.

Tasting notes

Binyamina Reserve Shiraz is made using the New Shiraz method with grapes grown in relatively cool regions to balance their intense ripe flavours with a fresher element. The wine, with its intense deep ruby red colour, contains distinctive aromas of ripe berries and white pepper overlaid with light smokiness, coffee and chocolate. Full-bodied and balanced freshness, with plenty of ripe black forest fruits and herbs, it finishes with a balanced and long finish.
